Special Diet Production Chef

Job Introduction

We are currently looking to recruit an experienced Diet Chef, to be responsible for organising and controlling the efficient and economical production of nutritious, tasty and appetising special diet foods/meals within budget at Chesterfield Royal Hospital. Whilst maintaining Sodexo’s statutory regulations regarding food safety management.

Role Responsibility

• Support collaborative partnership working with the relevant client specialist services, i.e. Nutrition & Dietetics and Speech & Language Therapy
• Prepare and cook food items following HACCP procedures to ensure compliance with food hygiene regulations
• Work with Sodexo’s site dietitian to ensure the meals produced meet Hospital Food Standards and patient’s personal dietary needs
• Ensure compliance with recipe specifications and required portion sizes
• Ensure on going stock rotation and accurate weekly stock take
• Ensure blast-chill methods are followed and in line with company processes and procedures
• Support and advise new starters and client student dietitians
• Support the procurement of foods applicable to special diets
• In liaison with the site dietitian and patient services manager, deal with client/ patient queries in a timely and appropriate manner
• Organise daily production plan – prioritising low stock items
• Work in conjunction with Sodexo’s site dietitian to develop and analyse special diet meals through the Diet Plan 7 nutritional analysis tool

The Ideal Candidate

• 706 1 & 2 qualifications or equivalent
• Level 2 food hygiene
• Computer literate
• Able to demonstrate good verbal and written communication skills
• Ability to multi task, self-motivated and able to adapt to changing priorities
• Ability to demonstrate flair and creativity with recipe development
• Working knowledge of special diets to include texture modified meals

Desirable:

• Experience of food preparation for a similar client base
• Experience in managing a team
• Qualification in Special Diets
• Qualification in Nutrition

Package Description

40 hours per week, flexibility is a must.

Working hours: 8.00am – 4.30pm, Monday – Friday
