Special Diet Chef - Cystic Fibrosis

Job Introduction

We currently have an opportunity for a Diet / Cystic Fibrosis Chef to join our team.

Role Responsibility

  • Prepare, cook and serve hot meals and beverages following the departments HACCP procedures and in compliance with the Food Hygiene Regulations.
  • Responsible for production of meals for patients on Special Diets
  • Prepare, Cook and serve hot & cold snacks outside of the meal times at the request of the patients.
  • To ensure that all food is prepared with due care and attention, particularly in regard to customers’ special dietary requirements: for example, Allergen free, low fibre, salt free, no added salt, Vegan, Low residue.
  • To ensure that foods from different Cultures around the world: for example Asian, African, Caribbean meet the Client and Sodexo standards.
  • Complete daily and weekly HACCP sheets
  • To assist in implementing and maintaining the prompt and efficient preparation and service of all meals and breaks at the required time, being provided to the standard of the food service offer(s) and laid down in the Service Level Agreement and to the Client's, Customer's and Sodexo’s satisfaction
  • Supervise the diet & decant bay when on shift.
  • Offer flexible options outside of the standard menu, with the ingredients available.
  • To report and, where possible, take action for any incidents of accident, fire, loss, theft, damage, unfit food, or any other irregularities
  • To complete weekly stock takes & ordering for the CF Unit & Diet Bay
  • Work alongside the catering manager to maintain the standard recipes and develop new menus
  • Deal with Question, Quires and complaint from both  patients and staff .
  • To attend meetings and training courses as required.

Desirable

  • Ability to achieve and set standards and operate to performance criteria, with particular regard to hygiene
  • Ability to work effectively as part of a team
  • Good interpersonal skills and ability to verbally communicate effectively with customers, clients, and staff
  • Knowledge of Special Diets
  • Diet Cooks Certificate
  • Literate and numerate
  • Level 3 Food Hygiene

 

Essential

  • 5706/2 or NVQ2 chef qualification, or equivalent
  • C  & G 706/1 & 2 or NVQ equivalent
  • City and Guilds/NVQ 3
