Sous Chef

Job Introduction

We have two excellent opportunities for Sous Chefs to join the Peyton and Byrne business (part of Sodexo) for the Grande Café and Keepers House Restaurants, these roles will assist the Head Chef with responsibility for all aspects of planning, organising and communicating within all kitchen departments.

Peyton and Byrne was founded by renowned restaurateur Oliver Peyton in 2005, with a flexible and high quality offering they develop unique products and branding to match the needs and aspirations of their customers. Role Responsibility

You will work with the restaurant team to understand customer expectations, consistently prepare and cook all food to the high level our clients expects whilst training the team to deliver to the same standards. Working with the kitchen team you will develop new menus, be hands on during busy service periods and assist in the management of food standards and quality across all areas. This is an excellent opportunity to undertake a leadership role, where you will be recruiting, training and mentoring teams, promoting a positive environment and an engaged workforce. You will also be involved in for staff rotas, holiday cover, stock levels and controlling costs.    

The Ideal Candidate

  • Experience within 4/5 star hotel restaurant and banqueting operations.
  • Previous experience at Sous or Jnr Sous Chef level
  • Management experience
  • Excellent culinary skills
  • Hold valid ‘Intermediate Food Hygiene certificate
  • Excellent spoken and written English
  • Strong problem solving and organisational skills
  • Flexible to work 5 days out of 7
