Regional Development Chef

Job Introduction

Sodexo Energy & Resources has an exciting opportunity for a Regional Development Chef to lead culinary excellence at our client sites in London. This diverse and unique role will support three client sites and lead a high performing culinary team to deliver exceptional food services to our client.

Role Responsibility

Accountabilities

  • Accountable to build a strong relationship with local management team.
  • Responsibility to train and develop the Health, Safety, Food Safety and Environmental Legislation relating to the building portfolio ensuring the statutory requirements are met and all records maintained
  • To co-ordinate monthly craft regional forums with full compliance and attendance. 
  • Plan and check that marketing initiatives are implemented
  • Menu development, testing and validating all new recipes working in line with Service operations,
  • Attend regular internal meetings

People

  • Recruitment and Trade testing of all lead culinary positions with in region
  • Develop people and ensure succession planning.
  • Key input to the performance of your culinary leads by giving input to support the review and appraisal process.
  • Ensure your team deliver your operation to the service standards agreed in the contract with your client.
  • Nurture client relationships in order to stabilise & develop them for long term partnerships where possible.

Finance

  • Develop team to increase the Client and Sodexo’s revenue opportunities i.e., commercial opportunities, labour efficiency and generate the GOP expected within the contract.
  • Comply with the unit budgets and forecasts.
  • 100% adherence to purchasing compliance and processes
  • Organise training for culinary teams in food cost awareness and waste management activities.
  • Ensure tariff prices are correct, that all catering services are costed to the terms of the contract
  • Produce weekly & monthly flash reports with accurate data.

Business Improvement

  • Be proactive in overcoming barriers to success.
  • Provide feedback on how we can improve our performance.
  • Networking – keep appraised of best practise within the industry by maintaining contact with professional bodies in other market sectors.
  • Market research and validation of what trends and market growth within your region are and report back
  • Responsible for driving Continuous Improvement throughout the region
  • Identify opportunities for organic growth and new business
  • Control all personal costs such as travel, expenses, as agreed with your line manager.
  • Comply with all Company and client policies, procedures and statutory regulations
  • Assist with all aspects of the preparation of food service areas and presentation of food to the notified standard.
  • Promote a friendly working relationship with colleagues.
  • Promoting a good company image to customers and guests
  • To report any incident of accident, fire, theft, loss, damage and take action as may be appropriate or possible.

The Ideal Candidate

Essential

  • City & Guilds or NVQ Level 1/2/3 or equivalent

  • Advanced food safety certificate

  • Strong level of literacy and numeracy

  • Highly effective communication and interpersonal skills

  • Clear and effective leadership style

  • Ability to analyse problems analytically, develop opportunities and implement innovate solutions/approaches

  • Excellent organisational skills and time management

  • Computer literate

  • Able to demonstrate personal self-development and development of team

  • Demonstration of team work, implementing initiatives and working on own judgement and decisions

  • Change management and performance management experience as with any operation, flexibility is a must.

  • Ability to adhere to all health & safety practices

  • Strong customer service skills

  • High levels of personal hygiene and appearance

  • Must have full UK& Ireland driving licence

 Desirable

  • IOSH

  • Industry organisation or committee membership

  • Positive can do attitude
