Head Chef

Job Introduction

We are currently seeking a Head Chef to work in one of our Dublin sites.

We are looking for someone with excellent organisational skills, the ability to prioritise their workload and have the ability to communicate effectively with a range of audiences.

You will be working as part of a team but you will at times be expected to work independently and under your own initiative.

Role Responsibility

The management of food production at State Street, support to the Executive Head Chef and associated kitchen functions in line with Sodexo’s service level agreement and Contract terms and all Company Food and Health and Safety Policies.

  • Deliver a consistent level of service within the company standards, to the contract specification, service offer and agreed performance, qualitative and financial targets.
  • Compliance to company and statutory regulations relating to safe systems of work, health and safety, hygiene, cleanliness, fire and COSHH.
  • Client retention and satisfaction.
  • Unit audit scores (i.e. Safeguard, EHO, Happy Heart, PRIP)
  • Ability to manage a team of staff.
  • Hold CIEH and IOSH certificates.
  • To show innovation and creativity on a regular basis

  • To ensure that all costs and expenditure are within the budgeted levels for the site.
  • To continue to develop the food service offer ensuring that quality and consistency are not compromised on any level.
  • To effecitively menu plan on a daily, weekly and monthly basis, taking delivery days, product availability, consumer trends on site and monthly budget costs into account.
  • To use Recipe on Line proactively – ensuring that correct products are entered against dishes in order that allergan sheets and dish costs can be established.
  • To promote healthy productive relationships with colleagues, clients and other contractors working at site.
  • To ensure the prompt and efficient preparation and service of all meals as laid out in the service level agreement with Central Bank.
  • To ensure that the statutory and company standards of hygiene, health and safety are implemented and maintained to the highest standards and carry out regular checks confirming this.
  • To ensure that all statutory and company policies and procedures are implemented and maintained and communicated to the team to ensure full compliance.
  • To ensure that all food is prepared with due care and attention, particulary in regard to customers special dietary requirements and in line with current allergen legislation.
  • Be a positive influencer and motivate and lead employees to perform their roles to a high standard and in alignment to Sodexo policies and procedures.

The Ideal Candidate

  • Proven experience in managing and leading a catering function
  • Industry acumen and knowledge of external catering developments and innovations
  • Experience in leading, and managing a team
  • Good hospitality management
  • Good catering hygiene standards
  • Budget management
  • Strong communication, and negotiation skills
  • Experience working in a standards / compliance environment
  • Relevant qualification and training and IT literate
