Executive Head Chef

Job Introduction

This is an exception opportunity for a culinary professional to showcase their skills and leadership ability at one our high profile contracts based in London.

As the Executive Head Chef you will ensure the prompt and efficient preparation and service of all meals to the required standard and in line with budget and to ensure compliance of all food hygiene and cleanliness standards on site. You will demonstrate innovation with off service offers and showcase new food trends. 

 

Role Responsibility

  • Lead the team to ensure the prompt and efficient preparation and service of all meals and breaks at the required time,
  • Ensure that all food is prepared with due care and attention, particularly in regard to customers’ special dietary requirements: for example, nut, dairy or wheat allergies
  • Demonstrate innovation in our food service offers and ensure the showcasing of new trends on site at regular intervals
  • Motivate and lead employees to perform their roles to a high standard and in alignment to Sodexo policies and procedures
  • Control staff rota and division of staff based on the days menu to ensure efficient utilisation of staff
  • Monitor waste, ensuring that it is kept to a minimum and action plans are put in place as necessary
  • Comply with all Company & client policies, procedures and statutory regulations including Human Resources, site rules, Health & Safety, safe working practices, hygiene, cleanliness, fire and COSHH. This will include your awareness of any specific hazards in your work place
  • Ensure all GA’a, FSA’s and Counterhands are trained in the use of equipment as required
  • Manage the ordering process for the site
  • Work as a team to promote harmonious working relationships within the Sodexo team
  • Report immediately any incidents or accidents, fire, theft, loss, damage, unfit food, or other irregularities and take such action as may be appropriate
  • To implement and maintain the Statutory and Company standards of hygiene, health and safety and take any action as is necessary.
  • Interview, select, train, supervise, counsel and discipline all employees within the department

The Ideal Candidate

  • Ability to achieve and set standards and to work to budget
  • Training and development of the team is given a focus for performance, engagement and retention
  • Deliver a food offer on trend with the high street counterparts.
  • Oversee regular promotions & food concepts/ innovations
  • Possess good interpersonal skills and ability to communicate effectively with customers, clients and staff to promote a team effort and maintain a positive and professional approach
  • Good time management and organisational skills
  • Ability to work well under pressure
  • Previous experience of managing a team
  • Basic Food Hygiene Certificate (Advanced managing food safety certification)
  • 706/2 or NVQ2 chef qualification, or equivalent
  • Industry acumen and knowledge of catering developments & innovations 
  • Previous Head Chef experience running both a hospitality offer including fine dining, events and staff dining restaurant 
  • Knowledge of Sodexo IT Systems (or equivalent on line systems) 
  • Menu Planning
